Distilled at the Bimber distillery which is located in London with the first casks being laid down on 26th of May 2016. This peated new make spirit release was bottled exclusively for the distillery and gives a view of how Bimber single malt starts life out. This was bottled from cask number 197/2020. A peated incarnation of our characterful London spirit. Floor malted by our Master Distiller and smoked by hand using equipment designed and built on-site. An early insight in what will eventually become a fully peated Bimber single malt whisky.
The founders of London's Bimber distillery, Dariusz and Ewelina, moved from Poland to the UK in 2003 and opened their distillery in the Park Royal area of west London twelve years later. The company’s first casks were laid down on the 26th May 2016, and three years later they released their first single malt in September 2019. This became the first whisky to be distilled and bottled in London for over a century. The distillery carries a “farm-to-bottle” approach by sourcing all of its barley from a single producer and using traditional floor maltings and slow fermentation techniques.
